Since it is reported that you are the #1 consumer of Rainbows in the State of Wisconsin I was interested in hearing some of your recipes for cooking them. I have this nice Rainbow from yesterday that is just waiting to be served...
P.S. This post is really for everyone that may have a good Rainbow recipe to try....

Dan:
Put 3 to 4 pieces of bacon on the botton of a 9 X 13 glass container. Cut up a onion into rings and place them on top of the bacon. Dip the rainbow filets into dry pancake batter, scramble an egg than dip into egg than put into a bag with Italian Bread crumbs just to coat the filets. I usually season the scrambles egg with Cajun season and Garlic power. Put the filets on top of the onion rings. Add additional onion rings on top of the filets and than place additional bacon strips on top of the onions. Place uncovered in the oven and bake at 375 degrees for 35 to 45 mins. When done, put the bacon in the microwave and finish cooking it and eat with the RAINBOW.
I forgot to mention, take the skin off the filet.
I have also used this receipt with Salmon.

This is GREAT I serve this to guest who say they do like fish and after words they DO... ALso this is the only way my wife will est it....
